Make Ginger Beer for the Holidays

Ginger Beer is a great tasting treat for the holidays. It has no alcohol and many health benefits.
Note: You will need to prepare this a few days in advance, and have a large bottle with a loose-fitting lid, such as a water or soda bottle.
Benefits of Ginger Beer
Ginger beer is better than over-the-counter drugs for nausea and motion sickness. It also works great for morning sickness for mothers who are pregnant.
Ginger beer contains powerful antioxidants that help to prevent and repair DNA damage, and helps prevent cardiovascular disease, strokes, and cancer.
Ginger beer is a good anti-inflammatory, which is great for arthritis and to prevent inflammation in the body–often the first step towards creating disease.
Ingredients for Ginger Beer:
1 – pound of Organic Fresh Ginger Root – Cut into 1/4-inch slices
2 – liters of filtered water (to start)
(Experiment as to how strong a ginger taste you enjoy… and change the recipe accordingly.)
1 1/2 – liters of filtered water (additional, to add later)
3/4 – cup of Organic Honey
1 – teaspoon of baking yeast
Optional ingredient 1: Lemon may be added to ginger beer, to your taste.
Optional ingredient 2: Hot chili pepper may be added for a lively boost.
Directions to make Ginger Beer:
Take one pound of organic ginger, slice it as thin as possible, and place in a large stock pot with two liters of filtered water.
Boil [uncovered] reducing until 3/4 of the water is boiled away, and there is a nice, brown ginger stock at the bottom of the pot. Remove it from the heat and filter with a strainer.
Add the additional 1 1/2 liters of water and honey. Mix well to combine and let cool.
Pour the cooled mixture into a large container with a loose-fitting lid; perhaps a water or soda bottle.
Place in the fridge overnight until nice and cold. Add the 1 tsp. of yeast and mix well.
Put the bottle back into the fridge with the loose-fitting lid for 48 hours… allowing the yeast to work and create the great tasting beer. Because of the fermentation process, it is best to open the lid and release some of the gas that accumulates.
Drink your ginger beer very cold and it’s wonderful!
