Recipe: Pumpkin Pancakes
Ingredients:
1/2 cup flour
1/2 cup whole wheat flour
1 Tbs baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground allspice
1/2 tsp ground clove
1 cup canned pumpkin or 1 1/2 cup fresh crushed pumpkin
1 cup fat free milk
2 Tbs cholesterol free egg substitute
2 Tbs canola oil
2 Tbs honey
1/2 tsp vanilla
In a small bowl, combine flours, baking powder and spices. In a large bowl, combine pumpkin, milk, egg substitute, oil, honey and vanilla. Pour dry ingredients over pumpkin mixture, stir just till dry ingredients are moist. Cover pancake batter and refrigerate 30 minutes to thicken slightly.
Lightly grease skillet or griddle and heat until hot. For each pancake, spoons 2 tablespoons batter onto griddle, cook until bubbles appear then turn over pancakes and continue to cook until golden brown. Serves 6.
