Whole Foods Plant Based Marinara Pasta with Italian Sausage

Feeling healthy and eating plant based foods doesn’t have to be boring and tasteless, there are all kinds of wonderful recipes that will warm the soul and are healthy.

You will love this great tasting hearty pasta that fuels the body… and does the body good.

Ingredients:

1 –  12oz box of Whole Grain Penne Pasta.

1 –  900 to 1000 gram – jar of low sodium, no sugar and no oil Marinara Sauce.

8 – Garlic Cloves put through a garlic press.

1 – Onion Chopped Fine.

1 – Red Bell Pepper – Chopped Fine

15 – Mushrooms Sliced in Half.

2 – Stalks of Celery – Sliced into pieces

1/8 – Cup of Chili Powder if you like it a little more spicy, and you can add a dash of red pepper too if you want spicy.

1 – 15 oz Can of Low Sodium or No Sodium Garbanzo Beans – drain and wash.

1 –  A little spray on oil on the bottom of the pan – uses a little as possible.

4 – Soy Italian Sausage – Sliced into chunks  – You can find them at your local health food store.

4 – Asparagus Sticks cut up into 1/2 inch chunks. – reserve for last minute.

1 – Large Tomato coarsely chopped. – reserve for last minute.

1/2 Cup of Italian Seasoning Herbs without salt.

Spray the bottom of your large pasta pan with spray on oil, use it sparingly. Next saute the onions, red bell pepper, garlic, celery, garbanzo beans, and mushrooms until the onions are translucent and the mushrooms are cooked. Now add the marinara sauce, Italian seasoning, soy Italian sausage, and chili powder and let cook for 10 minutes and then add enough water to cover all the veggies, then add the pasta and then add more water to cover to the top of the pasta.

Then cook until the pasta is just the way you like it, make sure to stir often so the pasta does not stick to the bottom of the pan. Next salt and pepper to taste, use the least amount of salt possible. Now add the freshly chopped asparagus and tomato and let cook for 1 more minute, then turn off the heat.



Let cool a little and you are ready to serve.

Makes a large pot of wonderful pasta that will keep in the frig for a week… and the left overs can be put in the freezer… great for when you come home from work and don’t feel like cooking.
