Plant Based and Whole Food Recipes

 Taro Root, Carrot, Garlic and Collard Green Stew

This wonderful and simple recipe is packed full of nutrition and energy for healthy and vitality… and it’s easy to make.

Ingredients:

6 – Medium Taro Roots – Peeled and Cut into Cubes

4 – Large Carrots Sliced

3 – Cups of Collard Greens – Chopped

8 – Minced Cloves of Garlic

A mixture of 50% Water and 50% Low Sodium Vegetable Stock to Pour Over the Veggies – Enough to Cover the Veggies.

Salt and Pepper to Taste

How to make:

In a large pot add the taro roots, carrots, and minced garlic, and add enough water and stock to cover them completely. Cook until fork tender and then shut off heat, remove carrots and using an immersion blender blend up 1/2 the taro roots until nice and creamy.

Add in your carrots and chopped collard greens and cover and let the remaining heat in stew cook your greens  (You don’t want to over cook them, just cook them until they change color). Check the thickness of your stew and if too thick add a little bit more water, and season with salt and pepper… go easy on the salt.

This great tasting stew will keep well in the frig for a week, and individual portions can be frozen for later use.

Taro Root is a low glycemic index food that’s great for lose weight, full of A,C, B, and E vitamins, and lots of great minerals, plus powerful antioxidants that boost your immune system, and Omega 3 and 6 oils for cardiovascular health, plus taro root reduces fatigue giving you energy.
