Q: What does being vegan mean to you?
To me, it’s about eating and living in a healthy, sustainable way that respects the earth and the other life forms we share it with. Vegan cuisine is inspired, exciting and delicious!
Q: It seems that vegan is becoming more and more popular. Can you comment on that?
I fully believe this is the culinary wave of the future. As we realize the fragility of the earth and its limited resources, as well as the countless health benefits of plant-based eating, it will be more of a mainstream accepted way of living. This shift is already occurring as countless celebrities, politicians, doctors, athletes and leaders of the business community now embrace the lifestyle.
It is becoming evident that the food we eat will affect our health. With the rise of the baby boomers, more people want to do everything they can to stay healthy. This trend will only continue to grow as people experience the amazing benefits and delicious flavors of vegan cuisine. Personally, I love showing people that vegan cuisine can be of the highest caliber and absolutely satisfying.
Q: Speaking of cuisine, your style is called Vegan Fusion. What exactly does that mean?
Vegan Fusion is the name of the company Bo Rinaldi and I formed close to ten years ago.
On one level Vegan Fusion highlights the cuisine from around the world, including ingredients and techniques from various cultures in the same dish or menu. On a deeper level, in addition to showcasing the cuisines of the world, it highlights the wisdom, sacred sites and beauty of our planet. The goal is to emphasize what unites us as a people. Eating food is a universal ritual that crosses all cultural boundaries. By incorporating healthy, sustainable, compassionate, and outrageously tasting vegan cuisine into this daily ritual, we feel we can bring more peace and harmony into our world.

I was interested in the Ravioli recipe but there is no mention of how to make the sun-dried tomato sauce. Did I miss something? Thx for this recipe – it looks good enough to take to my raw food potluck!
