Sure, here are a few recipes from my latest book, The 30 Minute Vegan’s Taste of Europe.
Tempeh Neatballs
One of the first dishes I learned to prepare as a child was meatballs and spaghetti. It is such a delight to be able to share this cow friendly version. Tempeh replaces the meat and the oat flour holds it all together. Top with Roasted Tomato and Garlic Sauce (see below) or your favorite pasta sauce. Serve with pasta du jour or make your own tempeh ball hero sandwich.
Serves 6 TO 8
2 tablespoons olive oil
1/2 cup finely diced yellow onion
3 garlic cloves, minced or pressed
16-ounces tempeh, finely diced
1/4 cup oat flour
3 tablespoons nutritional yeast
1 tablespoon wheat-free tamari or other soy sauce
1 tablespoon balsamic vinegar
2 tablespoons minced fresh basil
2 tablespoons minced flat-leaf parsley
2 teaspoon minced fresh rosemary
2 teaspoons dry oregano
1 teaspoon ground fennel, optional

I was interested in the Ravioli recipe but there is no mention of how to make the sun-dried tomato sauce. Did I miss something? Thx for this recipe – it looks good enough to take to my raw food potluck!
