Strawberry Avocado Ice Cream

Strawberry Avocado “Ice Cream”
- 1 large ripe avocado
- 2-3c. frozen strawberries
- 2 tbsp. unsweetened vanilla almond milk
- 1 dropper vanilla crème stevia or natural sweetener of choice (honey)
Blend in a Vita-Mix, blender or food processor until soft serve consistency. If using a regular blender, you will need to add more almond milk than listed.
Your Challenge:
Many of us eat the same things all the time. Pick one of your favorite recipes/foods and see if you can find a way to make it healthier. For example, this is a much healthier version of ice cream. Remember, healthier does not always equal lower calorie. Use high quality, nutrient dense ingredients.
