Tasty Tuna Cakes Topped with Tomatoes
Water-packed solid white albacore Tuna is a very healthy, low-fat lunch choice that is far
more versatile than most of us realize. These Tuna fish cakes can be served on their own or
with the salsa of your choice. They’re also lovely served with tomato chutney.
Refrigerate and enjoy them for lunch a couple of days in a row.
Ingredients
1 can Tuna in spring water (425g), drained
1 tomato, finely chopped
1 egg, beaten
1/2 cup mixed vegetables (i.e. celery, peppers and carrot- finely chopped)
3/4 cup almond meal
Salt and pepper
1 tablespoon olive oil
1/2 cup salsa of your choice to serve ( I like pineapple or mango salsa)
Cooking Instructions:
1. Place tuna, tomato, egg and vegetables in bowl.
2. Mix together until well combined.
3. Place almond meal on plate and season with salt and pepper.
4. Using heaping tablespoon of mixture, form into cakes.
5. Coat cakes in almond meal.
6. Heat pan over medium heat and add oil.
7. Cook cakes for about 2 minutes each side or until golden brown.
8. Serve immediately with tomato salsa of your choice.
