Thanksgiving Gluten Free Chocolate-Chip Pumpkin Bread

The leaves are falling, there’s crispness in the air which all reminds us of memories of gathering with friends and family and enjoying a feast. What I love sharing is that you can enjoy your Thanksgiving feast, with out gaining the dreaded pounds; you can eat the delicious bread, but avoid the rolling, upset, inflamed stomach from consuming the wrong flours and sugars.
No one wants to compromise on taste, especially during the holidays. I am here to say, you can have your bread and eat it too…and still loose weight!
Even if you are not gluten intolerant, consuming white or wheat bread flour is not a good idea for your gut health or your waistline. White/wheat flours along with white sugar spikes your blood sugar levels and creates inflammation in your gut, lowering your immunity during the winter season.
Nothing spells Thanksgiving and the smell of cinnamon baking in the oven than Chocolate Chip Pumpkin Bread! This wonderful recipe gives you the moist yummy taste you expect in Pumpkin bread, but with out the gluten, inflammation, or fat building sugars. DIG IN!
Chocolate Chip Pumpkin Bread:
Ingredients:
4 eggs (or vegan egg replacer)
2/3 c. water
1 c. melted coconut oil
1 c. honey
1 can pumpkin puree
1 tbsp. cinnamon
1 tbsp. nutmeg
dash of salt
2 tsp. baking soda
1 tsp. baking powder
1 c. almond flour/meal
2 1/2 c. brown rice flour
3/4 c. chocolate chips (70% +cocoa preferred)
Directions: Heat oven to 350 degrees. Grease two bread pans. Mix all ingredients together well. Pour equally in to the two pans. Bake for 1 hour at 350 degrees.
