Coconut Rice Dessert with Almonds & Pumpkin Seeds
This great tasting dessert with lots of plant based nutrition. Plus it’s simple, takes very little time at all, and it will keep in the frig for a week… if it lasts that long.
Ingredients:
3 – Cups of Brown Basmati Rice Cooked with 3 tablespoons of Vanilla Extract.
1 – Whole Coconut – Meat Removed and Grated or Shredded
3 – Cups of Unsweetened Soy Milk or any other none dairy milk.
1 – Cup of Agave Nectar – A Low Glycemic Index Sweetener.
2/3 – Cup of Fine Brown Rice Flour… you may only use part of this.
1/2 – Cup of Pumpkin Seeds – Unsalted
1 – Cup of Sliced Almonds – Unsalted
1/3 – Cup of Vanilla Extract – Use this at the very end of the recipe.
Place the cooked brown rice and the grated coconut in a large pan and add enough water to cover plus 1/2 inch more water. Bring to a boil and let boil down until water comes to just about the top of the rice, now add the milk, agave nectar, almond slices, pumpkin seeds, and 1/3 cup vanilla extract and stir constantly until everything is incorporated into the rice and well distributed.
Let come to a full boil and while stirring (don’t let it burn – keep stirring) add enough brown rice flour to thicken the pudding.
When it starts to thicken shut off the heat… and pour in a large pan and let cool in the frig.
When cold slice and garnish with banana slices.
Now you have a wonderful dessert that will make your mouth water.

Almonds lower cholesterol, help with weight loss, build strong bones, alkalize the body and help with inflammation… and help to prevent cardiovascular disease.
Pumpkin Seeds promote prostate health, enhance sleep, and contain lots of magnesium that helps you relax and sleep well.
Agave Nectar is a low glycemic index sweetener that doesn’t increase blood sugar as much as honey or other nutritive sweeteners. Plus it contains fructans and saponins that boost the immune system and help with inflammation plus it’s also a good antibacterial agent.
Vanilla is a good relaxing agent that also helps with stress… and boosts metabolism and at the same time it’s a very good antioxidant helping to slow the aging process and prevent disease.
Soy or Nut Milks are full of protein… and have lots of antioxidants that prevent disease and promote weight loss, plus prevents osteoporosis and prostate cancer.
