Shrimp & Ginger Soup
Serves 4

Ingredients:
1 Tbsp. Olive Oil
2 Tbsp. Fresh ginger diced
2 Cloves Fresh garlic, diced
2 Tbsp. Fresh Mint, rough diced
2 Green Onion, finely diced
2 Carrots, sliced thin diagonally
2 Cups mushroom
7oz Stir-fry noodles, linguini style (about ½ package)
1 Carton of chicken stock
1 cup water
8oz of Shrimp, frozen, cooked & deveined
1 Cup bean sprouts, rinsed
4 fresh basil stocks
Salt & Pepper to taste
Directions
1. Heat olive oil over med heat. Add ginger and carrots and sauté for 3 mins.
2. Add garlic, mushrooms and half of the fresh mint and sauté for 2 mins, stir often.
3. Add chicken stock and water and bring to a simmer. Add noodles and cook approximately 8 mins until a little more than al dente.
4. Add remaining mint, green onion and shrimp. Heat for a few mins until shrimp is heated through.
5. Plate in a large soup bowl. Rip basil with hands and add along with the sprouts to soup.
