Tammy Westney – Food is Foundational
In the sixties, I remember the popular expression, “You are what you eat.” It turns out the origin of this observation dates back to 1826 France and Jean Anthelme Brillat-Savarin. In his seven volume work, The Physiology of Taste, he wrote, “Tell me what you eat and I will tell you what you are.” His attribution of diet to mental, emotional, and physical health was as an astute observation then as it is today. How does what we eat and how we eat affect us and can a study of our dietary habits provide ways to restore health, happiness and well-being?
